
These muffins are very healthy and taste good, too. Julie loves these and has one every morning for breakfast with her coffee. They are also good for a mid-afternoon snack when you are in the mood for a healthier choice than sweets. She originally found this recipe on the back of one of the Kashi cold cereal boxes and would like to share it with those of you that try to eat healthy on occassion!
Makes 12 muffins-Preheat oven to 400.
1 cup whole wheat flour
2 tsp. baking powder
1/2 tsp. salt
1 3/4 cup Kashi Good Friends cereal
3/4 cup skim milk, soy, or rice milk (We use soy)
2 egg whites
1/4 cup honey
1/4 cup unsweetened applesauce (We use sweetened cinnamon flavor because we need it a little sweeter)
1 medium ripe banana
In a small bowl, stir together flour, baking powder, and salt. Set aside. In a large mixing bowl, combine cereal and milk. Let stand for 2-3 minutes. Add the egg whites and beat well. Stir in the applesauce, banana, and honey. Add flour mixture and mix until dry ingredients are moistened (over mixing will produce rubbery muffins).
Fill sprayed or paper lined muffin tins. Bake for 20-25 minutes or until lightly browned.
