West Coast Pasta


This simple recipe was given to us by our friend Carol. Her mom, Harriet, gave it to Carol many, many years ago and we've all been enjoying this since.

salt and pepper
2 tablespoons butter
1 tablespoons olive oil
1 large onion
1 clove garlic (chopped)
2 large fresh tomatoes
1/3 cup chopped fresh parsley
1/3 cup sliced, pitted black olives
4 oz. pasta (cooked and drained)
1/4 cup grated parmesan cheese (preferably fresh)

Optional: Cooked shrimp or chicken can be added to this recipe to make it a complete meal instead of a side dish.

In large skillet, heat butter and oil. Saute onion and garlic until golden (about five minutes). Add tomatoes and cook until mushy. Stir in parsley and olives. Put pasta in serving bowl. Ladle sauce over pasta and toss to coat. Season to taste with salt and pepper. Sprinkle with parmesan cheese.
