
This great recipe is from Melissa's friend Audrey.
2 eggs
1/2 cup sugar
1/4 cup plus 1/8 cup vegetable oil (or canola)
1/8 cup orange juice
grated rind of 1/2 orange
1/2 teaspoon vanilla
2 cups flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup chopped almonds, walnuts, or chocolate chips
Beat eggs, sugar, oil, juice, rind, and vanilla until blended. Sift dry ingredients and stir into batter. Add nuts or chips. Shape into 2 rolls (2" wide) on a lightly greased baking sheet.
Bake at 350 for 20-30 minutes. Remove from oven and slice into pieces 1" in width. Return to oven and bake 10-15 more minutes until dry.
