Salmon Croquettes


If your childhood was like ours, you surely remember salmon croquettes. We have vivid memories of Grandma Molly making them! They are great with mashed potatoes and creamed spinach...YUM!

1 14 1/4-ounce can red salmon, drained (do not discard bones)
1 small white onion, grated
1 whole egg, well beaten
1/3 cup sour cream
1/3 cup seasoned bread crumbs
1/8 teaspoon white pepper
1/4 teaspoon curry powder (optional)
1 tablespoon fresh lemon juice
extra seasoned bread crumbs
peanut or canola oil

Mix all the ingredients together, except the extra crumbs and oil, mashing the bones carefully. They are very nutritious.

Make round balls of the mixture. Flatten slightly and roll in the extra bread crumbs. Place in the hot oil and fry until crisp on both sides.
