Nana Emma's Spaghetti and/or Meat Sauce


This is our favorite...you can doctor up the sauce but this is the basic recipe.

Olive oil
1 medium to large onion, chopped
2 cloves garlic, minced
1 large can (28 oz) crushed tomatoes
1 small can (6 oz) tomato paste
fresh parsley, basil, oregano (dried works too)
Salt and pepper

FOR SAUCE:
In about 2 tablespoons olive oil, saute chopped onion over medium heat until cooked light brown (but not burnt). The longer you cook the onion, the better the flavor. Then add minced garlic, crushed tomatoes and paste. Add herbs, seasoning and mix thoroughly. Simmer on low heat for about one hour.

FOR MEAT SAUCE:
Mix together 1/2 pound each of ground beef and 1/4 pound each of ground veal and ground pork. Brown meat on stove and then add to sauce.
