
This is a recipe Julie found in a magazine. It looked very interesting with the combination of shrimp and brie cheese. Julie made it for dinner the other night and this will be one on her "repeat soon list!"
8 oz. Brie cheese (rind removed)
1/4 cup sun-dried tomatoes in oil, coarsely chopped
2 tomatoes, seeded & chopped
1/3 cup black olives, chopped
2 garlic cloves, minced
1 cup chopped fresh basil (it must be fresh, not dried for the flavor to come through)
1/2 tsp. black pepper
1/4 cup extra-virgin olive oil
12 oz. uncooked linguine
1 pound peeled & deveined shrimp, uncooked
parmesan cheese
Cube Brie and combine with the next 7 ingredients. Cover and let stand for 1 hour. Cook pasta according to package directions. 2 minutes before pasta is done, add shrimp. Cook pasta & shrimp for 2 more minutes. Drain pasta & shrimp and toss with Brie mixture. Serve with fresh parmesan.
