Emma's Favorite Chicken


Easy way to make a good, hearty dinner all in one pan.

Place 1 whole chicken (cut into 8 pieces) into large roasting pan. Rub with olive oil and then generously sprinkle Lawry's seasoned salt all over chicken. Cut up carrots, potatoes (white, sweet, or sometimes I use small fingerlings), brussel sprouts, acorn or butternut squash, or any other vegetable you like. Spread all the vegetables around the chicken in the roasting pan and then add about 1/2" water. Bake in oven at 375 for one hour. It will make a natural gravy that you can spoon over the chicken and vegetables.
