
This soup is great when you are under the weather. The garlic is extremely healthy, guards against colds, and is not too strong tasting. We always make this when we're just beginning to get a sore throat. Thank you Dr. Weil!
8 cups vegetable stock
1 1/2 tablespoons extra-virgin olive oil
1 whole head garlic (peeled and chopped)
1 bay leaf
1/4 teaspoon dried thyme
Pinch dried sage
Salt to taste
1. To stock, add oil, garlic, bay leaf, thyme and sage.
2. Bring to a boil, reduce heat, cover, and simmer 30 minutes.
3. Add salt to taste.
4. Strain and serve.
