Carrot Souffle


If you are tired of the usual plain vegetables served at meals, try this souffle. It's very good and a special hit with the kids. You can even bake this in individual ramekins. Thanks to cousins Ruth and Jon for this delicious recipe!

1 pound carrots
1/2 cup sugar
3 tablespoons flour
1 teaspoon baking powder
1/2 cup oil
3 eggs
1 1/2 tablespoons vanilla

1. Cook carrots in microwave until somewhat soft.
2. Combine carrots and other ingredients in food processor.
3. Spray baking dish or souffle dish with Pam, pour in ingredients, and bake at 350 degrees for 40-45 minutes (or longer for double recipe).
